Is she receptive to the idea of healthy eating? That's probably the first hurdle. If she's not, there's not much you can do or say to change her circumstances.

IMHO, the best thing to do is give her the information and let her read it and decide on her own if healthy eating is an option she's interested in. After that there are a number of ways she can eat to improve her health, Eat to Live being one of them.
