Dr. Fuhrman does not promote a soy-based diet, or a grain-based
diet, rather he promotes a vegetable and fruit based whole foods
diet. As far as the use of soy products goes, he has pointed out
that many soy products are very highly processed, unnatural, and
unhealthful foods, and that when choosing to eat soy, one should
stick to whole foods such as edamame. There is no requirement to
eat any soy products at all on the Eat to Live diet, however, they are
allowed if you wish. Personally, I eat tofu, but I limit my
consumption to once a week, as I do not feel that it is particularly
healthful compared to the rest of what I eat. I try to stick to whole
foods, and tofu is not a whole food, as it is only made from part of
the soybean.
