I am not sure exactly what you consider "pop" but here are some I know of:
Kula Shaker - everyone I know enjoys them. I believe they all are vegan. There is a very strong Hindu influence in their music. More so in the music of the last album, the others it is just in the lyrics.
Radiohead- I know that the lead singer is vegetarian (i'm not sure what kind). I assume that a good majority of them are vegan because of the stand they take in their lyrics. They also include Animal Liberation Front (a.k.a. ALF) in their W.A.S.T.E. organizations. The new album is excellent, it just came out on tuesday! No one will be disappointed.
Moby- everyone knows Moby is vegan.
Blur- I know they are vegetarian, I don't think they are vegan though.
Paul McCarteny- if you like the beetles?
Rage against Machine- I assume is, they have animal right issues posted on their site.
