I suggest that you check out Dr. McDougall's site, as he has there a free program that summarizes his program and the reasons why it works.

It does work well for diabetics. Dr. McDougall's program is the one used in the recent PCRM study that found that the low-fat vegan diet bested the ADA recommended diet for reversing diabetes symptoms.

You can continue to test with your meter to watch your own blood glucose readings. You can emphasize veggies as opposed to pasta & potatoes, although you may find, with a little experimentation, that different whole grains, such as teff, quinoa, barley, etc, do not raise your sugars as much.

If you genuinely find that you cannot eat too much pasta & processed flour type carbs, you can start with either Dr. Joel Fuhrman's books & dietary guidelines (which super-emphasize greens) or Dr. McDougall's Maximum Weight Loss book. The Maximum Weight Loss book is a great one for diabetics, since many of us struggle with excess weight-I know, I've shocked you again-and since the principles espoused in the book would steer one towards less processed foods.

Hang in there and enjoy this change. I find it to be very freeing. Feel free to wander over to the McDougall Wellness Board also.
