Might someone recommend to me a book catering to the vegan diabetic that offers exchange lists and sample weekly menus staying under 1200, 1500, or 1800 calories?

I’m looking for a week’s or several weeks’ worth of 1500-calorie menus that break down into 30% fat, 20% protein, and 50% complex carbohydrates, offer enough calcium for a woman in her late 20s, stay under 2400 milligrams of salt, and include 25-30 grams of fiber.

I’ve talked to nutritionists who refuse to touch a vegan, my doctor who thinks I’m crazy, and searched in my local libraries and online for almost two months. I’m out of ideas. Since an omnivore can find books detailing caloric menus and exchange lists at any bookstore, it seems odd that one hasn’t been written for us. My sincerest gratitude in advance for any help or advice you may be able to provide me.
