If you go to www.drfuhrman.com, and click on "reversing diabetes" (it will be on the center of your screen), where it says "reverse disease", I think you will be amazed by how powerfully effective Dr. Fuhrman's diet can be at actually reversing diabetes. And no, you don't have to give up your beans and legumes: Dr. Fuhrman calls his diet for diabetes a "greens and beans" diet. As mentioned in another post, he describes all of this in his book, "Eat to Live". If you adopt his diet, I feel sure that you will think of it as the best thing you ever did for yourself. I do not have diabetes, but use Fuhrman's diet to control multiple sclerosis. I have been able to discontinue my medication for that-- with the blessings of my neurologist-- and I am doing just wonderfully. I'm really glad to hear that you are a vegetarian, because I think that means you will take more readily to Dr. F's diet: LOTS and lots of green vegetables, other vegetables, plenty of beans, some fruits, and small amounts (for someone who needs to lose weight--about 1 ounce a day) of nuts and seeds, and maybe small amounts of whole grains. I so highly recommend that you read Eat to Live! If you come to eat that way, you will be much healthier than your friends who DON'T have diabetes. I've been comparing notes with some others who have switched to Eat to Live, and we all agree that one's tastes in foods actually change. My husband and I both eat this way, and we like our food even more now than in the old days; we just really look forward to our meals. I have collected some pretty amazing stories of changing tastes in diet (to a really healthy diet) which I could email to you. I should mention, I had been a yo-yo dieter all my life, and had done the Wight Watches thing twice. I'm now absolutely thrilled that I'm very trim, can always trust that my clothes will fit next week/month/10 years from now, and I love the food I eat. It's awesome.
