Subject: LCA Chilli Recipe

It's great to eat beans with breakfast. The protein slows the uptake of carbs and reduces blood sugar spikes. We serve beans or this chilli recipe every morning in our restaurant with breakfast. This chilli recipe has become my favorite. Enjoy!

LCA Chili

2 Tbs Olive oil (could substitute ¼ cup water for even lower fat)
2 c. Yellow onions, chopped
1/3 c. Green bell pepper, chopped
4 cloves Garlic, minced
3 Tbs Chili powder (we use 1 ½ for less spicy)
2 tsp. Cumin, ground
1/8 tsp. Cayenne pepper (we omit because of boys)
¼ tsp Oregano
1 tsp. paprika
1 12 oz. Package of Morning Star Farm burger crumbles in freezer section
1 15 oz. can Pinto beans – use with the liquid
1 15 oz. can Red Kidney beans – use with the liquid
1 15 oz. can Black beans – use with the liquid
2 cans diced tomatoes
1/3 cup Tomato paste
3 Tbs. Green chilies, mild, chopped

In large saucepan over medium heat, sauté the onions, green peppers and garlic in oil or water until onions are soft. Add the seasonings and sauté for 2 minutes. Add burger crumbles and remaining ingredients. Bring to a boil and reduce the heat to a simmer.

Yield: 11 1/2 cups (23 1/2 cup servings)
