You need to keep your fat consumption to about 10% of your calories. Fat will form a film and cover insulin receptors on the cells and also on the lining of blood vessels and arteries. Therefore sugar has a difficult time getting into your cells and out of your bloodstream quickly, resulting in high blood sugar. Check out Dr. Douglas Graham's "80/10/10 Diet" He also has a forum on this page. Watch the documentary "Simply Raw". Although it appears that they are eating at diet that consists of more than 10% fat, they still get great results since they are eating a bunch of veggies while generally avoiding fruits. However, you can eat a fruit based diet if you keep your fat consumption to 10%. That is what Dr. Graham's book is based on. One last thing. Work to eliminate the corn chips from your diet. Refined chips like that will spike your sugar very rapidly. If you want to eat nuts, they should definitely be raw and soaked for 12 hours before you eat them.
