I'm also vegan and have been diagnosed with PCOS. I try to avoid lots of soy products especially processed soy, like soy milk and isolated soy protein (that is in so many mock meats, cheeses and processed foods). I was under the impression that PCOS was an over expression of androgens and not estrogen (mostly because the symptoms are anti-feminizing, like balding, unwanted hair growth, acne, male-like weight gain). Can you post a link to more information about that? I'm also concerned that you are interested in a high protein diet as those kinds of diets have been linked to other health problems.
If you are interested in more information about PCOS and veganism, check out Dr. Joel Fuhrman's book 'eat to live'. He helped his own wife cure her PCOS and go on to have children (she was infertile as a result of the PCOS).
