Subject: Type I Diabetes and vegan diet for children?

There is absolutely no history of diabetes on either side of our family, yet 2 of our children are type I diabetics. Our son (9)has been insulin dependent for over 2yrs now and our daughter (10) has been developing diabetes for 1 1/2yrs and it is believed that she will be completely insulin dependent within a year's time. Neither child is overweight or even close to leading a sedentary lifestyle. Daughter had childhood shots and son never did because of the problems we had with daughter having them. We know that the key to our children having as normal a life as possible and as long as possible is in tight blood sugar control and good diet. We have been asking for 2yrs now about switching our son over to a vegan diet as well as our daughter. We have been told repeatedly by 2 different endocrinologists that this cannot be done and they will not participate for health reasons and the difficulty it would cause in counting carbs etc. (nor will the dietician from the diabetes team). Right now, our the children must have everything measured by the gram each meal and snack and have a certain amount of carbs from each of the groups (protein, startch, vegetable, fruit). We are not sure how you would go about providing the protein part of the equation without using products that do not exist in a vegan diet. We do not have other choices for their diabetes care that is less than 4hrs away. We travel 1 1/2hrs to these endocrinologists as it is. Is anyone else a type I diabetic that is on a purely vegan diet? How long have you been vegan and can you tell me the affects it has had on your lifestyle and health? We have 7 children (about to be 11 children) and plan to switch the entire family's diet over all at once so please keep that in mind with your replies. We have come to believe it is in our best interests to do such and certainly more healthy no matter how scarey or different it seems right now. Thanks in advance.
