What does the Catechism say, if anything?

I have been studying Catholicism for years - I have never heard anything that says one's status as a Catholic, a Christian, or even the status of one's salvation is at all connected to what one eats. Indeed, there have been scores upon scores of Catholic (and other) Religious, nuns, monks, priests etc., who have chosen not to eat meat. Genesis says we are given... "dominion," I believe is the word, over all creatures. However, that is not the same as "Here, eat these animals or you won't be saved." And I thought it was clear in the New Testament that our salvation depends on our faith - I don't recall off hand that Jesus ever said "You can eat anything you want." In fact, I don't recall Him referring at all to our choice of food on a daily basis.

Depending on who's reading the Bible, it may or may not say that we may eat meat. (I find people usually read what they want most to read in the Bible.) However, even if we are given the option of eating animals, it is still just one option. It's not the best option, or even the most preferable option. We still have to use the brains God gave us to decide if we have a good reason to eat, or not eat, animal products, and perhaps more importantly, to decide how to treat the animals in our care.
