I'm afraid that that is not a good diet for the long term. Mix up the grains-- bulgur wheat, barley, quinoa, pasta, etc. Add legumes-- beans, lentils, split peas and tofu-- for protein and variety. These are cheap. Use some olive oil. Have lots of seasonings around for flavor and have some veg bouillon powder or cubes around for making soups, etc. If you Google "frugal vegetarian", or "cheap vegetarian meals" lots of helpful blogs and websites. come up. To save money, you must learn to cook. Some local vegetarian associations hold cooking classes, but make good use of your public library, which probably has a good selection of vegetarian and vegan cookbooks.
