Why all the white rice? How about mixing up the grains, whole grains? Why the excessive amount of fruit? How about a little fat, some dried beans, tofu, etc.? Why boil the vegetables? You lose nutrients. Steaming, roasting, stir-frying or microwaving without water are better methods of cooking vegetables. To me this looks unnecessarily boring, repetitive and unbalanced.
