I usually eat oatmeal with apple chopped into it and soymilk. But there are so many choices! Soup is great for breakfast. Scrambled tofu (check out the recipe on my blog for Julie Hasson's scrambled tofu-- the best!)is easy and versatile. There are vegan sausages and "bacon" even in supermarkets, if you like those things. You can make all sorts of potato dishes-- hash browns, etc. Many whole grains make good breakfast cereals. Whole grain flours can be used for waffles and pancakes and eaten with fresh fruit. There are also smoothies made with fruit and any number of vegan milks. Soy yogurt with fruit is good. If you google "vegan breakfast" you will get tons of ideas.
