Yeah I used to be vegetarian and VERY lazy and unable to cook a decent meal for myself! For some recommendations on easy/ quick foods would suggest: However, its REALLY important that you get enough of the right foods each day so you get proper nutrition. Breakfast: Whole meal bread with jam or what ever your preffered topping is. Do you like cereal? You could buy something like wheat bix or oats and use soy milk/ rice milk. Otherwise, I used to also buy those quick oats that you mix with some soy milk and put in the microwave for a couple of minutes. Lunch: You could put a salad sandwich together. Just some hummus (chick pea spread), spinach leaves, carrot and cucumber. They also offer vegie burgers/ vegie sausages at the shops. Sanitarian has a great range! They are so easy to cook too! Just chuck them on the frying pan with a little olive oil. I know its a bit of an effort but its worth it! Also remember to snack on seeds and nuts, they are easy and often sold in little lunch packs. Pumpkin seeds, almonds, walnuts, brazil nuts and many more are full of important minerals and vitimins and lots of protein. Dinner: I used to be tired by the end of the day so I would buy those frozen pack vegetables with flavoring in them. Then I would put them in the fry pan/ wok and add 1/2 a can of chick peas, butter beens or lentils and heat for about 15 mins. Do you have a rice cooker? Cooking rice is much easier when you do. Try to eat brown rice though its much higher in protein. Snacks: Buy lots of fruits you like and make them VERY available in the fridge. I love apples so I keep them within grabbing reach! Just make sure you take a multi every day! I cant emphasise how important this is particularly when you are not very aware of nutrition. Its essential that you get the right minerals/ vitimins and protein every day for good health. Good luck!
