As for the vital wheat gluten, I can, fortunately, buy
it in bulk at my HFS. Are you in the US? If so,
amazon.com has a variety of sizes and brands
http://www.bulkfoods.com/ also carries it. (I had to
go to the bottom of the page to "search" and type in
"vital wheat gluten", then choose "exact phrase" to
find it.) They seem to have good prices and a variety
of sizes you can buy.
