Nobody uses Emes anymore-- I don't even think it
exists. It turned out that it contained animal
gelatin and they just faded into oblivion!

I will have a recipe in my new book (out this spring)
which uses part agar and part carageenan. Agar alone
doesn't melt well; carageenan alone melts too fast.
