Thanks, Ben! There are a number of new, better vegan cheeses out there (and a few oldies, too!). Sheese is one and they have some very tasty varieties! Galaxy Vegan has a good parmesan sub and their block cheeses aren't bad. Earth Island Vegan Gourmet isn't bad either. Daiya is the new kid on the block, and it's non-soy (made with pea protein). The mozzarella type is great-- melts, tastes good! Sheese and Tofutti have vegan cream cheese. You can also make some of your own. I have a homemade parmesan sub on my blog and many vegan cheesy subs in my cookbooks. I prefer to melt vegan cheese UNDER the vegetables on a pizza, BTW, and I cover casseroles with vegan cheese on top until the very end, or the vegan cheese tends to dry out. A little spray of oil from a pump sprayer doesn't hurt either. Check out vegan online vendors for the newest ones-- in Canada that would be Karmavore in the west and Viva Granola in the East. Vegan Essentials sells to both US and Canada. There are quite a few in the US.
