I have been trying to switch to a vegetarian diet for 4 1/2 weeks. I have not missed meat, I have not missed milk or butter, but my stumbling block has been cheese! The other day I made stuffed shells for the family and broke down! Really the 3 cheeses that i have had trouble with are ricotta, shredded parmesan, and cream cheese. I wondered if anyone had cheese w/drawl tips or some place with info about dairy that would be helpful. thanks.
