There are about a million of these salad recipes
around-- some more savory, some more sweet. some
contain more vegetables, some just fruit. Some use
cream cheese, some cottage cheese. Some use whiped
cream or Dream Whip, some don't.
Anyway, there are lots of these recipes here:

pineapple-jello-cheese-salad?&page=4
The cream cheese is easy-- you can use Tofutti
Better than Cream Cheese, or Cream Sheeze.
You'll probably want to avoid recipes using whipped
cream. Otherwise, if there is a health food store
near you that sells SoyaToo! Whip in a pressurized
can, you can use that.
You probably don't have time to order vegan lime
jel, which you can get here:

But, if you live in a big city with kosher stores,
you can find something similar, no doubt.
Otherwise, you can make your own lime jell using
gthe following recipe:

using lime juice and lime zest and sugar to taste.
Good luck!
