I had read this question (before Bryanna answered) but didn't really have any suggestions. Then I happened to be making some soup earlier today, where I added a "chicken" flavor to a vegetable broth, and it occured to me that Scotch broth is usually made with beef stock. So my suggestion would be to find a vegetarian "beef" flavor. What I was using for "chicken" flavor is made by Carmel (a kosher company, usually found in the kosher or ethnic section of supermarkets rather than in the soup section). I think the same company also has a "beef" flavor.
