I originally developed this to go on an Italian rice
salad, but it’s delicious on any kind of salad.
BRYANNA'S WHITE, CREAMY ROASTED GARLIC DRESSING
makes about 1 and 1/2 c.
1 head roasted garlic, squeezed out of peels
(or about 12 cloves from a jar of roasted garlic)
1/2 c. chickpea broth or other vegetarian broth
1/4 c. extra-virgin olive oil
1/4 c. white wine vinegar or cider vinegar (or white
balsamic vinegar)
1 tsp. Dijon mustard
1/2 tsp. salt
1/4 tsp. freshly-ground pepper
Blend the dressing ingredients together in a blender
or mini-chopper until smooth
