Roasted garlic is much milder and sweeter than raw
garlic, so it depends on what flavor you want. I
generally use 1 largish clove of crushed garlic in
about 2 cups of vinaigrette. It gets stronger as it
stands. On the other hand, I use a whole HEAD of roasted garlic in another dressing-- it makes the
dressing creamy when blended, actually.
