My daughter, age 13, has decided to be a vegetarian. As a meat loving mom I am trying to be supportive. But, I don't want to cook two separate meals. Right now as a family we tend to eat meatless 2-3 days per week. My husband and other children don't mind meatless chili with rice or veggie lasagna or eggplant parm. But, I need more easy recipes that aren't too exotic that will please the whole family. (Dad is Italian and hates onions so, baked onions would not be a good suggestion) I want to try to go to 4 days a week meatless for the whole family. I do realize the importance of protein for my daughter so she tends to eat lots of beans and rice when we have meat but any other advice for a new mom to a vegetarian is welcome. Thank you, Stacey PS: I have no plans to be fully vegetarian. As a teen I lived with a vegetarian family for three months and it was fine at first, but by the end I craved meat for the first time in my life. (I don't even want to admit what I ate that night, it's not something that I would want to eat normally) So, according to my naturopathic Dr friend, eating some meat is better than getting to the craving stage again)
