There is no need to freeze miso. One of our good friends makes traditional miso on the island where I live. He tells us that miso can be kept for many years, even unrefrigerated, if in a cool place (though refrigeration is better). It will get darker and stronger with age. Miso is used to preserve tofu and vegebales (like pickles) in japan.
