Echo, first of all, do you really mean yams, or are you referring to the orange-fleshed sweet potato? Lots of people get them mixed up. Just cut them (peeled or not) into whatever-sized sticks or wedges you want and toss with a bit of olive oil and sprinkle with coarse salt in a large, shallow baking pan. bake at 450 degrees F until browning on the outside and tender on the inside-- about 20 minutes-- turning gently a couple of times. YUM! (You can also add some spices, if you like.)
