I have been a vegetarian since I was 16 (now 23), and for most of these years my weight has been healthy, but over the last couple years I have lost a lot of weight, and now I am slightly under weight for my height. I used to really enjoy eating, but now with the added stress in my life, I have found myself skipping meals and getting less enjoyment in eating. Over time I got used to eating less and now have less of an appetite, but I've made it a goal to really work on increasing my appetite and eating enough. I'm trying to make eating fun again, and trying to get myself to a healthy weight. I need some advice and help in how I can do that. I've started keeping a food diary to keep track of what I'm eating and make sure I'm eating enough, and I'm planning on buying a scale so I can monitor my weight and make sure it is not going down. I need some help with what kinds of vegan foods I can eat. I know the foods that are higher in fat, but sometimes I get bored with them. I'm kind of stuck in a rut. I tend to like to eat small meals or more snack foods. I like mixed nuts, and have been trying to find a good seasoned mixed nut recipe that I can snack on. I like avocados but don't always know what to eat them with besides Mexican foods or in a salad. I would really appreciate any higher fat and calorie recipes, and advice on how to add fat and calories to my meals. In recipes for baked goods, can I just add extra oil to it without ruining the recipe? Also, I like vegan smoothies and shakes, but how can I add extra fat to it and keep it tasting good? Also would it taste good with soy or rice protein powder added? I know I asked a lot of questions, but I'd appreciate any advice, recipes or suggestions to help me to be healthier.
