Hi! I am contemplating making your tofu and seitan "turkey" roast for thanksgiving, but was wondering what the differences are between the older lots of kneading version and the newer no-knead version. I am not opposed to kneading if the result is better, but hey...if I don't have to knead :) I can spend that time making some other yummies :) Thanks in advance!
