dbf found it online, actually, reading about sodium alginate(sp?) and some guy using that to make this faux caviar stuff. and yeah, there seems to be a lot of people (non-vegans, even) experimenting with it.

i'll be looking for any posts about your progress with it and maybe if you like it, i'll order some, too!
