Frittata con Ricotta
It might be a starting point. However, you could just whisk the eggs a little and not beat them for a long time, so it would be more like a regular fritatta.
About the second request:
Here is a recipe for a Swiss chard fritatta fried in olive oil and containing breadcrumbs:

It may have been chard stalks that your grandmother was using-- I don't know. Anyway, you could use just about any vegetable.
