Bryanna - This might be a shot in the dark, but I figure if anyone can help, you can!
This time of year reminds me of two recipes my grandmother used to make - and being the goofs we are, no one has the recipes written down!
One is for something we called 'frosia' (I've seen it spelled on the web as frocia). However, the recipes I've found aren't how it was made. Recipes I've seen for frittatas are more similar - I know my grandmother's recipe called for 6 eggs, ricotta, and a bit of parsley and parmesan (not too sure about the last two, but think so). I remember trying to make it once; beating the eggs is the wrong thing to do; it's not meant to be fluffy. It is great served warm, cold, or room temperature. (It's cooked in a skillet.)
The other recipe used some type of stalky green vegetable - not asparagus, but sort of similar. She mixed it (leaving the stalks fairly whole) with eggs and breadcrumbs, fried it in a bit of oil in a skillet, and served it as a big flat thing - you just cut off what you wanted.
