Coming back again, could use suggestions with regards to family

Hello! I have not been on these boards since 2003! I have been back and forth, from a vegan lifestyle, to vegetarian, to omni, and back numerous times. My biggest setback? I am a wife and mother of two, and, with the exception of my youngest, my family has no intentions of eating a vegetarian diet. Since I have been back and forth for 5 years now, I have gotten to the point where I know what vegan/vegetarian meals I can get away with feeding my family. There aren't too many, unfourtunatly. But at least I got my husband and picky daughter interested in a few vegan dishes! (my son is great- he loves what I make.) The problem is that at some point or another, I get sick and tired of making different meals for everybody, and while I am not eating meat, my kids and husband are still, so I try to make them as healthy as possible. Now it is even more difficult, as I am in college part time, so there is less time AND less money, so buying a lot of foods for myself is pretty much out of the question.
I guess the reason I am writing this long story is that while I know many vegan and vegetarian recipes, how to shop locally and save money at farmers markets, etc., what I would love to know is if there is anyone else out there in a similar situation with family, and how can I keep from failing yet again?! Don't get me wrong; I plan on "attempting" veganisn til I get it, however long that may be.
