You came to the right place, Bryanna can give you more links and resources than you can shake a stick at!!
You are right to be amazed, there are so many more products now than there ever were before, and many more of them are really good.
I just wanted to say that my husband is like you, very picky and has eaten meat all his life, and he has discovered that he will eat anything in soup, and that he loves to cook soup. Vegetarian soups are also so varied, there is a never-ending variety and they can range from everyday to very exotic and gourmet. You should get some cookbooks, I do like Bryanna's for the reason that most all the recipes are very good, some cookbooks you will find some good and some not so good but I have very high rate of success with Bryanna's. And she also has recipes to "replace" anything you are used to having, comfort foods, things you like that you want to make a plant-based version of and they are very delicious.
Also, try not to be overwhelmed, sometimes you start out all into something and it wanes with time, if you take it slower and realize there is a kind of learning curve, and the world is not necessarily a friendly place if you're vegan (restaurants, mostly) you will have realistic expectations.
But I can say I've been veg for nearly fourteen years now, vegan for seven, and I can honestly say through all the difficulties it is by far the best decision I've ever made and I'll never go back. The variety of plant foods is endless once you start noticing and exploring them, I feel so good and it is great to be in line with your ethics all the way through. It's just a great way to live.
