This recipe was posted by Chef Deb, and makes a VERY omlet like dish, AS LONG as you like a "wet" "moist" omlet. When I was eating eggs, I preferred a "well done" omlet ... actually browned on the outer AND inner surface, and this recipe will never get that cooked.

Of course, according to "the book" an omlet IS supposed to be soft and moist when done, and this is a GREAT vegan omlet in that line!
