Try this recipe ... I've served this for family brunches, where I am the only veggie, and everyone LOVED it (tee hee ... even a tofu phobic friend ate this, NOT knowing what it was and loved it!)

Don't COMPARE this to eggs ... as with most vegan foods we choose to substitute for an animal based food, this isn't a carbon copy. Rather, try it for what it is "a new breakfast treat" and I think you'll really like it!!

Breakfast Burritos

1 tsp. turmeric
1 tsp. curry powder
1 tsp. cumin
4 tsp. onion powder
1/4 cup nutritional yeast
...............Mix the above items in an airtight jar, mixing well

Heat some olive oil in a non-stick pan. When hot, crumble one pound of extra firm tofu into the pan (if the tofu is not real firm, first cut it into slices and press between towels to get rid of alot of the moisture). Add in some chopped onion. Saute until the onion is soft, and the tofu is as "cooked" as you want it to be. Salt and pepper to taste.

Sprinkle in one Tablespoon of the above spice mixture and mix just until well dispersed.

Lay out 4 soft flour torillas that have been warmed in the microwave. Spoon a tablespoon or two of salsa down the middle. Spoon the tofu mixture on top of the salsa and roll up. Serve with hash browns.

For a real taste treat, make these into chimichangas (this is great for a supper meal) ... after rolling up the tortillas, return them to the pan you just sauted the tofu in (which still has all those great spices clinging to the pan). Add a little more oil if necessary. Then pan fry the roll up to get a nice crispy outer coating and serve!
