Probably just leftover habit. Maybe it hasn't been that long since you went veg. It probably has nothing to do with any kind of nutrients, just because your body craves something doesn't mean it's good for you (i.e. alcohol, cocaine, ice cream). Maybe you need to find more alternatives? I would say that I vaguely miss salmon, but as I find more and more wonderful things to eat, that feeling fades away. If you crave something make something similar. Get some commercial seitan (better than MY homeade, at least!) and make something yummy out of it. Commercial seitan has an amazingly meatlike texture. Other than that, I guess it's just the level of your commitment, for me, it's unthinkable, but then I've done this for quite a few years and am very seasoned at it. Maybe it's something that will pass with more time . . .
