If you're becoming a veg for health reasons - why are you eating ramen? It's incredibly unhealthy and has pretty much zero nutritional content. But then again, it's pretty nice stuff when you're too lazy or hungover to cook real food. I've been veg for about 12 years, and have no trouble finding veg ramen. Maybe you should hunt down some good spice/sauce combos, and just buy a big packet of plain noodles. And chuck in some FRESH VEGGIES! It takes about 5 minutes extra, makes you feel like a human, and is a million times healthier for you than eating some weird dried out stuff from who knows where/when.
