Schools should provide alternatives, but only certain states are required by law to do so. Some states even have laws protecting students from having their grade suffer from opting for an alternative to dissection or experimentation. The only dissection I participated in was the cadaver lab, but objecting to animal dissections of fetal pigs, cats and other animals were not held against me and I still managed near perfect scores on the lab exams.

California, Florida, Illinois, New Jersey, New York, Oregon, Pennsylvania, Rhode Island and Virginia all have laws protecting students if they object to dissection. Other states do provide alternatives as well, and reasonable professors shouldn't reflect your choice on your grade.

You should talk to the dean, but be prepared when you walk in. Explain your situation in a calm and eloquent manner, and then present him or her with computerized alternatives you could use if the school has none. Computer dissection programs are available on many different animals used for dissection, and there are loan programs available for any school wishing to obtain them. If you really wanted to score points, you could purchase the program and donate it to the school for future students to use. Perhaps there is a vegetarian club at your school that could divide the costs.
