I recently purchased "Good Eating", by Stephen Wise, which is an examination of vegetarianism from a Christian perspective. He points out that vegetarianism is one of the most concrete ways in which we can practice true stewardship of God's creation. I highly recommend it.

And I can understand your reservations, since while vegetarians and vegans do come from every walk of life, I've met far, far more atheist/agnostic/New Age-y vegetarians than I have Christian ones. In a way, I think that's just par for the course, though. I think *anyone* with a clearly defined set of values (aside from vague, basically self-centered ones like "Do what you want as long as it feels right and doesn't hurt anyone else"), whether those involve practicing a faith or being an ethical vegetarian, is going to be a little bit of an outsider no matter what.
