The book is by Brenda Davis and Medina Vesanto. It is a wonderfully detailed and researched book that i believe should be the vegan bible.

However if you want my personal and amateur advice for being a healthy vegan i would suggest that you start to eat more nuts and seeds like hemp, sunflower, pumkin and flax. Eat more greens like collard, kale and bok choy and eat more mushrooms(like shietake and portabella). I don't know what it is about mushrooms but i believe that they satisfy that part of our humanity that it isn't so natural or primate. Of course this is an incredibly biased and subjective opinion.
