It can be hard to deal with other people's negative impressions of veg*ns and veg*nism--I've been veg for 18 years and it doesn't really go away. I keep a pretty low profile and, unless someone brings it up, I don't make an issue of it. That is not to say that people don't bring it up...! When it happens, I'm armed with the research I've done, and I never try to force my beliefs on anyone else (though the reverse can't be said.) Surprising, though, how much of an impact our example can have; through "passive persuasion," I've converted 7 or 8 people over the years.

I think you're right in your belief that, in general, most don't understand the issues relative to veg*nism. I would recommend that you read Lyman's "Mad Cowboy"--Howard was a cattle-rancher (quite the manly-man crowd) when he went veg. There may be some support for you there, and maybe it'll help arm you with crystallized information that isn't just based on moral questions.

Most major cities have veg-based organizatons--have you looked around in your city?
