Related chemistry: any organic chemist knows that (their may be a few exceptions, but i do not know of any) animal and plant fats are solid and liquid in our bodies respectively (due to differences in melting point of the fats). After digesting fats, ones blood contains fat; if that fat is solid the blood is more difficult to pump and fat is deposited on the inner wall of the blood vessel. This does not occur if the fat is liquid. The impact on coronary health is obvious. If one is also overweight, their heart is stressed constantly thus low aerobic fitness and heart attacks are expected, and common.
