I have had to be creative because my newly veggie husband is quite picky. Instead of tofu alone at the beginning, we have found some great tasting mock meats Boca grilled burgers are yummy, as are Boca's spicy chicken pattie. Ready Ground Tofu is brown and crumbly like loose hamburger and you can use it the same. I started with highly seasoned chili and spaghetti and he loves it now.
Gardenburger makes some great stuff-we love their bbq "rib" patties they make great sandwiches. Start out simple there is plenty of time to be creative as your taste buds change and refine themselves. Also if you are really wanting to do the block tofu, freezing it changes the texture so it is less gelatin-like and marinate it in highly seasoned marinades.
