Diet for a New America by John Robbins
He talks about the horrors of factory farming and the impact of our food choices on the environment, but he also says quite a bit about nutrition, if that's what you're looking for.

The Vegan Sourcebook by Joanne Stepaniak
It's a great book for learning about the vegan lifestyle, nutrition, recipes, etc.

Also, have you checked out the Veganism or the New Veggies Discussion Boards here? I usually just lurk myself, but you can always go there for any questions you might have.

There are also plenty of other websites out there dedicated to veganism that have lots of info. Can't think of any in particular at the moment, but if I do, I'll post them.
