I have an etiquette book that, believe it or not, actually addresses this. The polite, and proper, thing to do when invited to eat at anothers home is to explain any special dietary needs you may have.

If your in-laws are anything like mine, they may look at you like you just announced you are from venus when you explain you are veg ("What do you eat then??"--always one of my favorite questions.)
In time, they will learn to accept,if not totally understand.
"You need meat to be healthy" is a myth that runs deep in this culture. It is getting better, but we still have a long way to go.
