If you're wanting to build muscle, you need to keep your reps low, around ten per set. As to how much weight you should lift - as much as you can without breaking form.

The key is to lift consistently heavier weights each workout. If last time you managed 8 reps, this time do 9. If last time you managed 12 reps, this time go one step heavier and do as many reps as you can.

I'd highly recommend the Hypertrophy-Specific Training website, especially the forum there. They're very good at giving answers based on science rather than common "knowledge" or just plain superstition, and are much more expert than me.
