<p>He is James "Lightning" Wilks, an MMA fighter best known to many for winning The Ultimate Fighter TV challenge, US vs. UK.&nbsp;</p>
<p>James holds a Black belt in Tae Kwon Do and a Brown belt in Brazilian Jui Jitsu.</p>
<p>James was at our Healthy Lifestyle Expo 2012, and I asked him what he does to stay in such great shape.</p>

        <![CDATA[<p>David Murdock, who owns the Dole Fruit Comany, is a man after our own hearts. No, he's not vegan, but he he is definitely plant-strong.</p>
<p>The New York Times profiled him today, nothing he eats with a "with a methodical, messianic correctness that he believes can, and will, ward off major disease and minor ailment alike."</p>
<p>Some excerpts:</p>
<p>"... fruits and vegetables: he crams as many as 20 of them, including pulverized banana peels and the ground-up rinds of oranges, into the smoothies he drinks two to three times a day, to keep his body brimming with fiber and&nbsp;vitamins."<br /><br />I wish we all did more of this: "He tries to fit in weight lifting several times a week, and that, combined with brisk walks on a treadmill and his diet, helps keep his weight at about 140 pounds, though he has always been naturally slender, even when he ate what he pleased. "<br /><br />"He doesn&rsquo;t count&nbsp;calories&nbsp;or believe in extreme&nbsp;caloric restriction&nbsp;as a way to extend life."<br /><br />Joel Fuhrman MD would mostly approve: "a six-fruit smoothie; a mixed-leaf&nbsp;salad&nbsp;with toasted walnuts, fennel and blood orange;&nbsp;a soup&nbsp;with more than eight vegetables and beans; a sliver of grilled Dover sole on a bed of baby carrots, broccoli and brown rice."<br /><br />"He will ask employees or friends who are putting sugar in coffee or milk in tea why they want to kill themselves..."<br /><br />Perhaps Murdock is a bit misguided about sweeteners: &nbsp;"sweetened not with sugar but with honey" and "still cookie-struck, he walked into the kitchen to ask that a few be packed up for him to have handy through the afternoon."<br /><br />But in general the man doesn't appear miss a trickl: "He is careful to get a little bit of daily sun, which is crucial for proper absorption of&nbsp;vitamin D, but not too much, lest he court&nbsp;skin cancer. He tries to go to bed no later than 11 p.m. and to get more than six hours of sleep every night. "</p>

        <![CDATA[<p>Jack LaLanne died on Sunday, at the age of 96.  He was a mentor to me, as he was to many.  He was a great man, more so than most people realize.</p>
<p>His wife of 51 years, Elaine LaLanne, knew.  "I have not only lost my husband and a great American icon,&rdquo; she said, &ldquo;but the best friend and most loving partner anyone could ever hope for.&rdquo;</p>
<p>When it comes to exercise and health, the name &ldquo;Jack LaLanne&rdquo; has long been virtually synonymous with ﬁtness.  Jack literally inspired millions to live a healthful life.   But Jack LaLanne didn&rsquo;t start out as a model of health.  Far from it.</p>
<p>When he was a teenager, he dropped out of school for a year because he was so ill.  Shy and withdrawn, he avoided being with people.  He had pimples and boils, was thin, weak, and sickly, and wore a back brace.  &ldquo;I also had blinding headaches every day,&rdquo; Jack recalls.  &ldquo;I wanted to escape my body because I could hardly stand the pain.  My life appeared hopeless.&rdquo;</p>
<p>Then he met the pioneer nutritionist Paul Bragg, who preached a new way of living, and to his credit, Jack listened.  Bragg asked Jack, &ldquo;What do you eat for breakfast, lunch, and dinner?&rdquo;</p>
<p>Cakes, pies, and ice cream,&rdquo; Jack answered truthfully.</p>
<p>&ldquo;Jack,&rdquo; Bragg replied, &ldquo;you&rsquo;re a walking garbage can.&rdquo;</p>
<p>He pointed young Jack in a healthier direction.  That night Jack got down on his knees by the side of his bed and prayed.  He didn&rsquo;t say, &ldquo;God, make me the strongest man in the world.&rdquo;  Instead, he asked for a new beginning.  &ldquo;God, please give me the willpower to refrain from eating unhealthy foods when the urge comes over me.  And please give me the strength to exercise even when I don&rsquo;t feel like it.&rdquo;</p>
<p>Jack set out to see what he could accomplish with a good diet and exercise.  He found a set of weights and began to use them.  He ate only the most healthful of foods.  He developed exercise equipment that evolved into what has become standard in many health spas today.  In 1936, he opened the ﬁrst modern health club, paying $45 a month for rent in downtown Oakland.</p>
<p>Jack LaLanne touted the value of exercise and nutrition long before it became fashionable.  Many people thought he was a charlatan and a nut.  When he encouraged the elderly to lift weights, doctors said this was terrible advice.  They said it was a good way for the elderly to break bones. But now, of course, we know that weight-bearing exercise is precisely what is needed to build bone strength and prevent elderly bones from breaking.  He was among the ﬁrst to advocate weight training for women.  Doctors said women who tried it would not be able to bear children.  Now we know that regular exercise is one of the best preparations for childbirth.  Over the years, he&rsquo;s been vindicated a thousandfold.  His television programs have brought his ideas to hundreds of millions of people and helped change the way we all view health and ﬁtness.</p>
<p>It has been said that without eccentrics, cranks, and heretics the world would not progress.  Jack LaLanne was most certainly an eccentric. On his sixtieth birthday, he swam from the notorious Alcatraz island prison to San Francisco while handcuffed, towing a thousand-pound boat.  &ldquo;Why did you do that?&rdquo; people asked.  Jack&rsquo;s response: &ldquo;To give the prisoners hope.&rdquo; (The prison has since closed, and today Alcatraz Island is a U.S. National Park Service attraction.)</p>
<p>On his sixty-ﬁfth birthday, Jack LaLanne towed sixty-ﬁve hundred pounds of wood pulp across a lake in Japan.  On his seventieth birthday, he celebrated by towing seventy rowboats with seventy people on board for a mile and a half across Long Beach Harbor, all while handcuffed and with his feet shackled.</p>
<p>He said his purpose in these phenomenal performances was to demonstrate that a healthful lifestyle can work wonders.</p>
<p>Having pioneered health and ﬁtness gyms in the United States, Jack was gratiﬁed that physical ﬁtness and nutrition have become a huge growth industry worldwide, because he believed that the emphasis on exercise and a healthful, natural diet creates stronger, smarter, and better people.  &ldquo;With healthier citizens,&rdquo; he said, &ldquo;we unburden society from sickness, and reduce the medical bills that are draining people&rsquo;s savings and causing so much grief.&rdquo;</p>
<p>Even in his nineties, Jack was a living testimony to the value of regular exercise and a healthful lifestyle.  He was for many years a vegan (no meat, dairy, or eggs), but in his later years, though he still ate no dairy products―&ldquo;anything that comes from a cow, I don&rsquo;t eat&rdquo;― he occasionally ate egg whites and wild ﬁsh.  Mostly, he ate organic raw fruits and vegetables.  And he took vitamins.</p>
<p>His vibrant message was that it&rsquo;s never too late to get in shape. &ldquo;Those who begin to exercise regularly, and replace white ﬂour, sugar, and devitalized foods with live, organic, natural foods, begin to feel better immediately,&rdquo; he said.  He emphasized that it takes both nutrition and exercise.  &ldquo;There are so many health nuts out there who eat nothing but natural foods but they don&rsquo;t exercise and they look terrible.  Then there are other people who exercise like a son-of-a-gun but eat a lot of junk. . . .  Exercise is king.  Nutrition is queen.  Put them together and you&rsquo;ve got a kingdom!&rdquo;</p>
<p>Even at the age of 95, Jack LaLanne was still a model of ﬁtness and vitality.  Full of life and spirit, his one-minute &ldquo;Jack LaLanne Tip of the Day&rdquo; pieces were still being shown on seventy television stations.  As energetic and ﬂamboyant as ever, he was still speaking all over the world, inspiring people to help themselves to a better life, physically, mentally, and morally.</p>
<p>When he was 94, Jack was asked if he thought he&rsquo;d live to be 100.  His answer was to the point.  &ldquo;I don&rsquo;t care how old I live! I just want to be living while I am living!  I have friends who are in their eighties, and now they&rsquo;re in wheelchairs or they&rsquo;re getting Alzheimer&rsquo;s.  Who wants that?  I want to be able to do things.  I want to look good.  I don&rsquo;t want to be a drudge on my wife and kids.  And I want to get my message out to people.&rdquo;  He smiled.  &ldquo;I tell people, I can&rsquo;t afford to die. It would wreck my image.&rdquo;</p>
<p>He was once asked about George Burns, the famous comedian who made it to 100 though he smoked cigars, drank alcohol, and was not health oriented.  Jack, it turns out, knew George Burns well, and he answered, &ldquo;George Burns was more athletic than you think he was.  And he was a very social man.  He loved people, he enjoyed life.  He worked at living.  Old George was a social lion, he got around and did things.  That&rsquo;s the key right there.  It starts with your brain.&rdquo;</p>
<p>Jack LaLanne was a man of great accomplishments.  But perhaps his greatest achievement was that this once painfully shy and sick young man learned to love people and to love being alive.</p>

        <![CDATA[<p><em>Serendipity leads to transformation.</em></p>
<p>On the day, three-and-a-half years ago, that Frank Ferrante  wandered&nbsp;into&nbsp;Café Gratitude on Ninth Avenue&nbsp;and Irving Street in San  Francisco, he was 54 years old and weighed 287 pounds.</p>
<p>Depressed and lonely, Frank&nbsp;was a recovering drug and alcohol addict.  He had a lousy relationship with his ex-wife and no relationship with  his daughter.&nbsp; He was pre- diabetic, had hepatitis C, drank 10 cups of  espresso a day just to stay awake, and had been on anti-depressants for  10 years.</p>
<p>If you don't know the drill at Café Gratitude, the vegan raw food  restaurant, every day they have a question.&nbsp; On that day, it happened to  be: "What do you want to do before you die?" which was delivered by  Ryland Engelhart, the son of the owners.&nbsp;&nbsp;</p>
<p>Frank's&nbsp;answer was, "I want to fall in love again, once more&nbsp;before I  die, but I'm afraid nobody will love me with this body that I'm  wearing."&nbsp;</p>
<p>Touched by the honesty of the response, Ryland sensed a project. With  his brother Cary, and his childhood friend Conor, he set out on  mission. He knew he had story. Which led to the idea of a video. Which  eventually became a movie entitled, "May I Be Frank."&nbsp;</p>
<p>It would be funny, Ryland thought, if an Italian guy from Brooklyn,  who pretty much speaks his mind in hilarious one liners, starts eating  raw vegan food, loses some weight, and we video his responses.&nbsp; Little  did he know what he had. With anyone else, he might not have had much.  With Frank&nbsp;as the "star," the movie is a gem.</p>
<p>The documentary chronicles what takes place when a goal is set and  you have a support system of people around you who don't allow for  failure. Frank literally put himself and his life into their hands and  the three young men scheduled, schooled, and stood by Frank for a period  of 42 days. He wasn't able to get away with anything. In fact, they  taught him about a lot of things, including the power of love.&nbsp; &nbsp;&nbsp;</p>
<p>The movie they wound up with is about the transformation of&nbsp;body, mind, and spirit.</p>
<p>This film is without pretense.&nbsp; Raw in both food and emotion, the  journey embarked upon by both sides is serious and funny, tense and  touching, and transforming for everyone including the audience.</p>
<p>A contract&nbsp;was signed on&nbsp;Valentine's day.&nbsp;The journey began. The&nbsp;guys  became&nbsp;Frank's&nbsp;spiritual cheerleaders. Each morning he  downed&nbsp;a&nbsp;large&nbsp;glass of wheat grass juice.&nbsp; Meals&nbsp;were  vegan&nbsp;raw.&nbsp;There&nbsp;were&nbsp;daily affirmations. &nbsp;</p>
<p>The timeframe of 42 days is derived from <em>The Abounding River</em> board game and book created by Café Gratitude owners Matthew and Terces Englehart about their&nbsp;practice in "being abundance."&nbsp;&nbsp;</p>
<p>The first project was to cleanse Frank's&nbsp;kitchen by tossing almost  everything in the fridge and&nbsp;cabinets.&nbsp; Then came&nbsp;colonics, visits to a  holistic practitioner,&nbsp;&nbsp;breakthroughs with&nbsp;family members, and a whole  lot more. The final week was filmed was at the Englehart's meditation  and yoga retreat in Hawaii. By day 42 Frank was down to 157 pounds. &nbsp;</p>
<p>Frank&nbsp;says, "I didn't lose the weight. I gave away what didn't belong  to me."&nbsp;His life was changed forever. He's no longer on  anti-depressants. He's writing a book. He still dislikes wheat grass  juice. Did he find love? You'll have to see for yourself.</p>

All they had to do  was renovate the chalet in St. Moritz, buy the latest Gulfstream (<a href="http://investing.businessweek.com/research/stocks/snapshot/snapshot.asp?symbol=GD">GD</a>)  jet, lay off 5,000 employees, or marry a much younger Asian woman. By  now, though, they've used up all the easy ways to distinguish themselves  from the rest of us--which may be why a growing number of America's most  powerful bosses have become vegan. Steve Wynn, Mort Zuckerman, Russell  Simmons, and Bill Clinton are now using tempeh to assert their  superiority. As are Ford Executive Chairman of the Board Bill Ford (<a href="http://investing.businessweek.com/research/stocks/snapshot/snapshot.asp?symbol=F">F</a>), Twitter co-founder Biz Stone, venture capitalist Joi Ito, Whole Foods Market (<a href="http://investing.businessweek.com/research/stocks/snapshot/snapshot.asp?symbol=WFMI">WFMI</a>)  Chief Executive Officer John Mackey, and Mike Tyson. Yes, Mike Tyson, a  man who once chewed on human ear, is now vegan. His dietary habit isn't  nearly as impressive as that of Alec Baldwin, though, who has found a  way to be both vegan and fat at the same time.</p>
<p>It shouldn't be surprising that so many CEOs are shunning meat, dairy,  and eggs: It's an exclusive club. Only 1 percent of the U.S. population  is vegan, partly because veganism isn't cheap: The cost comes from the  value of specialty products made by speciality companies with cloying  names (tofurkey, anyone?). Vegans also have to be powerful enough to  even know what veganism is.</p>
<p>"CEOs are smart. There just hadn't been enough exposure for people to  glom onto this trend," says Ingrid E. Newkirk, president of People for  the Ethical Treatment of Animals. "The information is everywhere now.  Instead of 'Better buy this blue chip,' it's 'Better eat vegan.' " When  Newkirk learned Wynn had become a vegan, she didn't think the news was  crazy. "Having dolphins in a small tank outside a casino is crazy," she  says. "Ordering vegetables is not."</p>
<p>Wynn agrees. The self-described "animal nut," who included the Humane  Society of the U.S. in his will, sold the Mirage Hotel--and its dolphin  tank--in 2000, and gave up meat and dairy this June. Wynn was converted  when his friend--telecom mogul and recent vegan Gulu Lalvani--made him  watch <cite>Eating</cite>, a documentary in which director Mike Anderson  explains his strict meat- and oil-free diet. "I watched it, and I  changed the next morning," says Wynn. "Bang! Just like that." The  transition was eased by the fact that Wynn happened to be on a yacht  with a personal chef. As soon as he got home, he began spreading the  gospel as only a mogul can--like buying 10,000 copies of <cite>Eating</cite>,  one for each of his employees. "I'm providing the ass for the  insurance. If they're sick, we're picking up the tab," says Wynn. "If I  can keep them healthier, I'm acting like a smart businessman."</p>
<p>Wynn's a convincing salesman, but a decade ago even he couldn't have  given away free seitan. Being a vegan then was so weird that pundits  listed it as a reason Dennis Kucinich couldn't be the Democratic  Presidential nominee. "People weren't sure if it was another political  party or an ethnic group they'd never heard of," Kucinich says. While  the Ohio representative failed to win the Democratic nomination in  2004--and in 2008--Kucinich's diet has become so accepted that he was able  to persuade Representative Robert A. Brady (D-Pa.), the head of the  Committee on House Administration, to include vegan  options in the  congressional cafeteria. When Bill Clinton announced his dietary  epiphany--"I got back to basically what I weighed in high school," he  told Wolf Blitzer this September--Kucinich decided to  finally finish his  own diet book, whose working title, <cite>The Cleveland Diet</cite>,  will probably be changed by its publisher. Kucinich, however, did not go  vegan for power, but rather for love. Fifteen years ago, he says, "I  met someone who was vegan when I went to the state senate. This was  someone I was very fond of. This was kind of a courtship strategy."</p>

<p>As much as some people may try, it's hard to dislike Vanilla Ice (a.k.a.  Robert Van Winkle). A former '90s rap sensation who skyrocketed to fame  with the hit "Ice, Ice Baby", the 42-year-old now has his own home  re-modeling television show on the DIY Network called "The Vanilla Ice  Project".</p>
<p>While there's little to indicate if Vanilla's got any green  inclinations when it comes to building, we do know that his diet is  earth-friendly.&nbsp;</p>
<div>"You know how some people can have a bunch of cheeseburgers and get high cholesterol? Mine was hereditary," <a class="external" href="http://www.ecorazzi.com/2010/10/12/vanilla-ice-opens-up-about-vegetarian-diet/" target="_blank">he revealed recently</a>.         <![CDATA[<p>I live for the day when I am not shocked when I find out that someone is vegan. Today is not that day. First Mike Tyson. Then Bill Clinton.  And now Steve-O, one of the stars of Jackass, a man who tortures  himself on film for a living, has come out as a dog cuddling, vegan  living star.</p>
<p>First, remember that Steve-O earned his fame on MTV's Jackass, a show  that was about grown men doing the dumbest, more painful things they  could possibly come up with, on film.</p>
<p>Steve-O then fell into a cycle of drunken debauchery, depression and  all around trouble. Arrested for drug possession, kicked off MTV for  rowdy behavior and intoxication, things were not going well. So unwell,  as a matter of fact, that his friends had an intervention that led to  Steve-O's hospitalization, suicide watch and rehab.</p>
<p>That when then. What is the now? Steve-O at PETA's 30th anniversary gala  telling reporters how much he gushes over his rescue dog, Walter  Cronkite, a dog he picked up at a sidewalk adoption drive in Beverly  Hills, and a dog he credits with teaching him "love and tolerance."</p>]]>

        <![CDATA[<p>As a big, burly lineman on the Cal football team, Richard Fisher can be fairly characterized as a meat-and-potatoes kind of guy, hold the meat. Please, hold the meat.</p>
<p>Fisher, 6-foot-2 and 280 pounds, is a rarity in college football: an offensive lineman who is also a vegetarian. Put him and his fellow O-line veggies around the country in the same room and it wouldn't take long to call roll.</p>
<p>"People ask if I'll ever eat meat. Someday, maybe," Fisher said. "But I worry about what might happen to my intestines the day after. I'm not sure it would be a good experience."</p>
<p>When fellow guard Brian Schwenke was asked if he could function as a vegetarian, he recoiled in horror. "I'd die," he said.</p>
<p>As for Fisher, a lacto-ovo vegetarian, he's living quite nicely on a diet of milk, cheese, eggs, pasta, beans, fruit, pizza (remember, hold the meat), peanut butter and jelly sandwiches, protein shakes, ice cream and, of course, vegetables. Stir-fry dishes with eggs is a favorite, as is pizza, particularly from the Cheeseboard in Berkeley.</p>
<p>Fisher, a senior from the Santa Cruz Mountains hamlet of Ben Lomond, has been a vegetarian longer than he can remember. A line in Fisher's bio in the media guide is startling: "has been a vegetarian since he was a toddler."</p>
<p>For that he can thank his progressive parents, Eric and Brett Fisher. They embraced a vegetarian lifestyle years ago and raised three no-meat children.  "My parents originally ate meat," Fisher said. "They went to a Tony Robbins seminar and got the global food perspective. They were into working out and being healthy. They actually started out vegan, so I was a vegan for a couple years. That was really hard to get protein, especially growing up, so they said, OK, we can eat dairy."</p>]]>

        <![CDATA[<p>Jonathan Safran Foer's book <em>Eating Animals</em> changed me from a  twenty-year vegetarian to a vegan activist. I've always been shy about  being critical of others' choices because I hate when people do that to  me. I'm often interrogated about being vegetarian (e.g., "What if you  find out that carrots feel pain, too? Then what'll you eat?").</p>
<p>I've also been afraid to feel as if I know better than someone else  -- a historically dangerous stance (I'm often reminded that "Hitler was a  vegetarian, too, you know"). But this book reminded me that some things  are just wrong. Perhaps others disagree with me that animals have  personalities, but the highly documented torture of animals is  unacceptable, and the human cost Foer describes in his book, of which I  was previously unaware, is universally compelling.</p>
<p>The human cost of factory farming -- both the compromised welfare of  slaughterhouse workers and, even more, the environmental effects of the  mass production of animals -- is staggering. Foer details the copious  amounts of pig shit sprayed into the air that result in great spikes in  human respiratory ailments, the development of new bacterial strains due  to overuse of antibiotics on farmed animals, and the origins of the  swine flu epidemic, whose story has gripped the nation, in factory  farms.</p>
<p>I read the chapter on animal shit aloud to two friends -- one is from  Iowa and has asthma and the other is a North Carolinian who couldn't  eat fish from her local river because animal waste had been dumped in it  as described in the book. They had never truly thought about the  connection between their environmental conditions and their food. The  story of the mass farming of animals had more impact on them when they  realized it had ruined their own backyards.</p>
<p>But what Foer most bravely details is how eating animal pollutes not  only our backyards, but also our beliefs. He reminds us that our food is  symbolic of what we believe in, and that eating is how we demonstrate  to ourselves and to others our beliefs: Catholics take communion -- in  which food and drink represent body and blood. Jews use salty water on  Passover to remind them of the slaves' bitter tears. And on  Thanksgiving, Americans use succotash and slaughter to tell our own  creation myth -- how the Pilgrims learned from Native Americans to  harvest this land and make it their own.</p>]]>
