Previously we told you about the plant-based intervention underway in a small rural dairy town in Pennsylvania, involving EarthSave Board member and Good Food Ambassador, Rip Esselstyn. You can read the previous story here.
Well recently, Rip returned to Mercersburg PA to officiate over a "graduation" ceremony.
Those being recognized were about 120 local residents who had completed Rip's Engine 2 Challenge -- eating a plant-based diet for 28 days, losing weight and watching their cholesterol and blood pressure numbers fall.
Many of those who participated were so impressed by their improvement in health and energy, they stated their intention to stick with plant-based eating for good.
Rip's Pennsylvania plant-strong program was documented on video, and we will be releasing a film about the experience later. One participant, interviewed for the film, owns a family dairy farm -- and now serves only vegan food in her home!
A local Pennsylvania TV station WGAL sent a reporter up to see what all the plant-based fuss was about.
