2 cups cooked sweet potatoes
1 cup soymilk
1/2 cup maple syrup
3 Tbsp oil
1/4 cup cornstarch
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp powdered ginger
1/4 tsp powdered cloves
1 tsp cinnamon
1 tsp vanilla
Mash or blend sweet potatoes in food processor. Add remaining ingredients and mix completely. Pour mixture into unbaked vegan pie crust. Bake at 400 degrees for 50-60 minutes.

I'll have to try this. It seems similar (simple, whole food) to this:
2 1/2 to 3c of hominy
2Tbl sugar (I do it to taste as I'm blending it)
2tsp baking powder
1/4c flour (whole wheat, spelt, whatever)
a pinch of salt (or none at all)
1 egg (optional, or try ground flax and water)
mix in a blender or mash the corn with a mortar pestle and bake about 25 min at 375F (till brown on top)
Note that the hominy is the key - it is NOT at all like corn meal!
I make hominy this way (but one can use wood ash, or food grade lye instead of baking soda):
2Tbl baking soda in 4c of water
2c of dry corn (yellow or "indian" is ok)
bring to a boil and simmer for 1 hour
rinse the corn several times trying to get off some of the skin (you want to rinse out the baking soda).
bring to a boil, and simmer, with clean water for another 1.5 hours or until the kernels are soft enough to mush with a mortar and pestle.
Note that hominy can be used in all sorts of soups and other dishes. I've not had any luck trying to make my own tortillas from it though.
