Native Foods, a vegan restaurant founded by Chef Tanya Petrovna, is opening its third Orange County restaurant on Wednesday.
The restaurant serves mostly organic vegan food created by Petrovna, who's working on her third cookbook.
"We're really excited. This is such a new environment for us. It's really busy here," co-owner and marketing director Andrea Mcginty of shop at The District at Tustin Legacy. The restaurant is filling the space vacated by Go Roma, near the AMC Theater.
This is just a first step for Petrovna and Mcginty, whose husband, Daniel G. Dolan, is the company's chief executive officer.
They plan to open 20 restaurants by the end of 2010. Other new restaurants in Orange County could be in San Clemente, Huntington Beach and Yorba Linda. Location details have not yet been finalized. The company also is planning to open shop in Los Angeles, San Diego and might open out-of-state in Boston or Chicago.
"Our goal is to get the concept that vegan food is delicious. People said, 'rabbit food' to me and I was always in such a quandary about that," Petrovna said. "It can't be done with one or five stores - it has to be a multitude to gain the acceptance of the general public."
